Another night of cooking in the Croft kitchen...

Tonight's new recipe was due to the fact that I haven't been grocery shopping so I had to make something with what I have, which isn't much. And I realize the picture isn't very appetizing! But it was actually delicious, Dan went back for thirds and raved about how good it was. He always like the most simple ones, when I try something hard he never really likes it. Funny how that works!

Ingredients I used: 1 1/2 cans of Hormel bean chili, 1 lb hamburger meat, 2/3 cup shredded cheese, 2/3 cup chunky salsa, 6 large tortillas cut in 1" strips, 3/4 cup water. First I browned the hamburger and drained the fat, then added in the chili, HALF of the cheese, salsa, water and tortillas. I mixed it all together and poured it into a large shallow baking dish. Cooked at 400 for 25 minutes, added the rest of the shredded cheese and a dollop of sour cream in each bowl. Easy, not particularly healthy but I made do with what I had and I'm happy with it!

I don't have a lot of time to blog now because I need to go hang out with my sweet little guy before putting him to bed. But I have a lot of great things planned for this week. I'm going to push myself to the limits and feel accomplished. Stay tuned!
